- 1 medium wholemeal loaf, cut into 6 x 1 inch thick slices
- 100g goat's cheese, divided into 6 even portions
- 2 large vine tomatoes, sliced into discs
- sprigs of basil leaves
- salt
- black pepper

Method
A great addition to a picky bit tea, these easy crostinis are simply delicious. A well-loved combination of goat's cheese and tomato is lifted with the addition of fresh basil leaves. Try them today, you won't regret it.
- Pre-heat the grill to hot.
- Toast the sliced bread for 2-3 minutes on each side until lightly coloured. Spread the goat's cheese evenly onto the toasted bread and season with black pepper. Top each with a slice of tomato, then season with salt.
- Return to the grill for 1 minute, then transfer to a wooden serving platter. Garnish with each with a sprig of basil leaves. Serve immediately.
