A classic Greek salad is a staple for your recipe repertoire. It's great on its own or as part of a bigger spread with grilled meat or veg. We like to serve it with toasted pittas for an easy lunch. See method
Ingredients
- 25ml extra-virgin olive oil
- ½ lemon, juiced
- 1 red pepper, deseeded and finely sliced
- 1 green pepper, deseeded and finely sliced
- 4 salad tomatoes, sliced
- ½ cucumber, deseeded and finely sliced
- 1 red onion, finely sliced
- 100g feta cheese, cubed
- 100g black olives
- dried oregano, to serve
If you don't have red onions, try using white, brown or spring onions

Method
- Lightly whisk the olive oil and lemon in a large bowl. Add the peppers, red onion, tomato and cucumber and toss together.
- Spoon into serving bowls and dress with the cubes of feta and the black olives. Season with a little oregano before serving.
