Greek-inspired sausage pittas recipe

Transform leftover sausage and butter bean traybake into these tasty Greek pittas. Load your pittas with garlicky veg and crunchy salad, then finish with a dollop of feta yogurt for a meal that whole family will love. See method
Ingredients
- about 800g leftover Greek sausage traybake, sausages cut in half lengthways (see recipe, above)
- 4 wholemeal pittas, toasted
- 1 Little Gem lettuce, roughly chopped
- ½ cucumber, thinly sliced
- 1 red onion, thinly sliced
- 10g fresh flat-leaf parsley, roughly chopped
- 150g leftover garlic and feta yogurt sauce
If you don't have red onions, try using white, brown or spring onions

Method
- Warm the leftover Greek sausage traybake in the microwave on High for 3-5 mins, or until the sausages are piping hot. Slice open a pocket in the pittas and divide the sausage mixture, lettuce, cucumber, red onion, parsley and spoonfuls of yogurt sauce evenly between each one.
- Serve hot with the remaining yogurt sauce.
