Grilled chipotle salmon tacos with mango salsa recipe

Ingredients
- 500g (1lb) salmon fillet
- 1 tsp garlic salt
- 1 tbsp chipotle purée or sauce, or other chilli sauce
- 1 tbsp smoked paprika
- 1 tbsp soft brown sugar
For the mango salsa
- 2 small mangoes
- 1 small red onion
- 2 tbsp fresh coriander
- 1 lime
To serve
- 4 small soft tortillas
- finely shredded white cabbage
- sour cream
- chipotle sauce or other hot sauce
If you don't have red onions, try using white, brown or spring onions

Method
- Rub the salmon with the garlic salt, chipotle purée, smoked paprika and sugar. Season to taste. Heat the grill and cook on one side until cooked through (about 5-7 minutes depending on the thickness). If using an oiled grill pan, keep the heat medium-low so the fish doesn’t burn. Turn the salmon pieces over to grill the other side.
- Meanwhile, toss the mango salsa ingredients in a small bowl. Season to taste.
- Flake the salmon and serve warm in soft tortillas with the mango salsa, shredded cabbage, sour cream and hot sauce.
