Ingredients
- 350g penne
- 250g cherry tomatoes, halved
- ½ red onion, finely chopped
- 1 lime, juiced
- 2 tbsp olive oil
- 15g fresh coriander, chopped
- 2 avocados, peeled, stoned and cut into chunks
If you haven't got penne, try using fusilli or another short pasta

Method
- Cook the pasta in a large pan of boiling salted water for 8-10 mins until cooked. Drain well.
- Meanwhile, toss the tomatoes, onion, lime, oil and most of the coriander into a large bowl. Season well. Tip in the drained pasta and the avocado chunks. Toss everything together before serving. Top with the remaining coriander.
