The grilled cheese sandwich is the epitome of comfort food. We’ve put a twist on the traditional toasted sandwich by combining salty Parma ham, fresh spinach, nutty Gouda and a sweet and spicy relish. Encased within extra thick bread, this truly is the ultimate grilled cheese sandwich. See method
Ingredients
- 8 chunky slices bread, roughly 1cm thick
- 200g (7oz) mature Gouda, rind removed, finely sliced
- 8 slices Parma ham
- 50g baby spinach, finely chopped
- 1 large knob of butter
For the relish
- 4 tbsp ketchup
- 2 tbsp mayonnaise
- dash of Worcestershire sauce
- dash of Tabasco

Method
- Combine the relish ingredients in a small bowl, season with black pepper, then spread a thin layer onto each slice of bread.
- In a hot griddle pan, cook the bread slices (relish side up) until griddle marks form. Remove from the pan, top 4 of the slices of bread with cheese, then add the ham, followed by the spinach. Season with black pepper; sandwich with the remaining bread.
- Melt the butter in a large, lidded frying pan over a medium-low heat. Add two sandwiches and cover with the lid. Cook for 7-10 mins, then flip and cook for a further 7-10 mins, until the cheese is melted. Repeat with the remaining sandwiches and serve immediately.
Cook's tip: Unlike toasties, grilled cheese sandwiches are fried in butter to ensure a crispy exterior. For a lighter version, skip this step and cook under the grill. For the bread, wholemeal or sourdough work best, as they are robust enough to hold the fillings. A seeded loaf will add extra crunch, if preferred.
