Ingredients
- 1/2 cauliflower, cut into florets
- 1/2 broccoli, cut into florets
- 2 tbsp harissa paste
- 4 tortilla wraps
- 1 x 375g jar tomato and basil sauce
- 125g (4oz) ricotta

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the caulifower and broccoli in a bowl and toss with the harissa paste, until coated.
- Lay the wraps flat on two large baking trays. Spread each wrap equally with the tomato sauce.
- Top with the broccoli and caulifower, then use a teaspoon to spoon the ricotta over each wrap. Bake for 15 minutes, until the edges have crisped up. Serve immediately.
