It wouldn't be Christmas without mince pies and we've got the perfect recipe so you can bake your own at home. With just four ingredients and using pre-made pastry as a shortcut, baking doesn't come easier than this. This mince pie recipe is also dairy-free, so everyone can tuck in. See method
Ingredients
- 500g block shortcrust pastry
- 12 heaped tbsp mincemeat
- 1 egg, beaten
- 1 tbsp sugar

Method
- Preheat the oven to gas 6, 200°C, fan 180°C.
- Grease a 12-hole muffin tin. Roll out the pastry to 3mm thick. Stamp out 12 x 10cm rounds and gently press into the holes of the tin. Stamp out 12 x 7cm rounds for the lids and set aside.
- Add 1 heaped tbsp mincemeat to each pastry base. Brush the edges with egg, then top each with a lid and press to seal. Prick the lids. Lightly brush with egg and sprinkle over sugar. Bake for 15-20 mins.
