Hot honey halloumi flatbreads recipe

These Greek-inspired flatbreads are loaded with crispy halloumi and homemade tzatziki for a fresh and simple summer dinner. Top with pink pickled onions for zing and a drizzle of hot honey for a moreish sweet and spicy sauce. See method
Ingredients
- 1 small red onion, thinly sliced
- 3 tbsp apple cider vinegar
- 2 tbsp clear honey
- 1 tbsp sriracha
- 1 tsp crushed chilli flakes
- ¼ cucumber, coarsely grated
- 100g Tesco Finest Greek yogurt
- 1 lemon, zested
- ½ garlic clove, finely crushed
- 10g fresh mint, leaves picked and finely chopped
- 1 tbsp olive oil
- 175g Tesco Finest halloumi cheese, cut into 1cm slices
- 1 pack Tesco Finest 2 flame-baked flatbreads
- 10g fresh flat-leaf parsley, roughly chopped
If you don't have red onions, try using white, brown or spring onions

Method
- Preheat the oven to gas 6, 200°C, fan 180°C.
- Toss the red onion in the vinegar adding a small pinch of salt. Set aside to pickle for 25-30 mins until bright pink, then drain off the excess liquid.
- Meanwhile, mix the honey with the sriracha and chilli flakes.
- Place the cucumber in clean tea towel and squeeze out as much water as possible. Transfer to a bowl and mix in the yogurt, lemon zest, garlic and mint until evenly combined. Season to taste.
- Heat the oil in a large frying pan over a medium heat. Cook the halloumi slices for 2-3 mins on each side until golden and crisp.
- Warm the flatbreads according to pack instructions.
- Smooth the tzatziki over the base of the flatbreads and top with the halloumi, pickled onions, parsley and a drizzle of hot honey. Serve immediately.
