You can't beat a classic jacket potato with baked beans and cheese, it's easy on the purse strings but still 10/10 delicious! See method
Ingredients
- 4 large baking potatoes
- 1 tsp olive oil
- 50g salted butter
- 2 x 420g tins Stockwell & Co baked beans in tomato sauce, heated
- 80g mature Cheddar cheese, grated
- 1 tsp fresh chives, finely chopped
If you haven't got any jacket potatoes, try using sweet potatoes. Cooking times may differ.

Method
- Preheat the oven to gas 6, 200°C, fan 180°C.
- Wash the potatoes well and pat them dry with kitchen towel. Prick the potatoes with a fork a few times.
- Rub the potatoes with the olive oil and season with a little salt. Put on the top shelf of the oven. Bake for 1 hr-1hr 15 mins depending on the size of the potato until the skin is crisp and the inside is soft.
- Remove and make a cross in the centre of each potato, season and add a knob of butter.
- Top each potato with some hot baked beans and a sprinkle of cheese.
- Finish with chives and some freshly ground black pepper to serve.
