Spanish tapas isn't complete without potatoes. Enjoy these saucy and spicy Jersey Royals as a part of a tapas feast or as a side dish. See method
Ingredients
- 500g (1lb) Jersey Royals, halved
- 30 ml (2 tbsp) olive oil
- 1 small onion, finely diced
- 2 cloves garlic, 1 crushed, 1 halved
- 2g (1 tsp) smoked paprika
- 2g (1 tsp) chilli flakes
- 2g (1 tsp) ground cumin
- 15ml (1 tbsp) red wine vinegar
- 20g (1 tbsp) honey
- 2 x 500ml cartons passata
- 2g (1 tbsp) flat-leaf parsley, finely chopped

Method
- Preheat the oven to Gas Mark 7, 220°C, fan 200°C. Place the potatoes on a baking tray and toss with 1 tbsp of the olive oil. Season well and roast for 30 minutes or until golden brown.
- While the potatoes are cooking, make the sauce. Pour the remaining olive oil into a saucepan. Add the onion and garlic and sauté for 5 minutes until soft. Add the spices, vinegar, honey and passata. Season to taste. Simmer for 10 minutes, or until the sauce is thick.
- Sprinkle the potatoes with the parsley and serve with a bowl of the warm tomato dipping sauce.
