These tasty quinoa lettuce wraps make the perfect snack or light lunch and are crisp, crunchy and full of flavour. Mixing fluffy quinoa with zesty lime, fiery chilli and creamy soft cheese and wrapping in a fresh lettuce leaf gives a tasty bite that's sure to keep you satisfied. See method
Ingredients
- 175g quinoa
- 400ml hot vegetable stock
- 2 garlic cloves, crushed
- ½ small red chilli, deseeded and finely diced
- 1 lime, zested and juiced
- 2 spring onions, finely sliced
- 3 tbsp coriander, roughly chopped, plus extra to garnish
- 1 tbsp light soft cheese
- 8 large round lettuce leaves
- 1 red pepper, deseeded and finely sliced into strips
If you don't have any limes, try a lemon instead

Method
- Empty the quinoa and vegetable stock into a small pan and simmer, covered, for 15-18 mins, or until the stock has been fully absorbed. Set aside to cool for a few minutes.
- Stir the garlic, chilli, lime zest and juice, spring onions, coriander and soft cheese into the warm quinoa, until combined. Season with black pepper.
- Divide the quinoa between the lettuce leaves and top with the red pepper and a little extra coriander. Tuck in the ends of the lettuce and roll each one up, securing with a skewer or cocktail stick. Serve immediately.
