- 2 tbsp red wine vinegar
- 1 tsp wholegrain mustard
- 1 tsp caster sugar
- 1 Little Gem lettuce, leaves separated
- 20g baby spinach
- 3g finely snipped chives

Method

- In a small bowl, whisk together the olive oil with the red wine vinegar, mustard and caster sugar. Season to taste.
- Put the Little Gem and spinach in a serving bowl, pour over the dressing and toss together. Top with the snipped chives to serve.
