As jacket potato filling ideas go, this one is up there with the tastiest! A rich, tomatoey sausage ragu with melting mozzarella and herby breadcrumbs. This is simple food, but so delicious and satisfying – perfect for a hearty family meal. See method
Ingredients
- 4 baking potatoes, scrubbed
- 2 tsp olive oil
- 40g fresh breadcrumbs
- ½ tbsp dried parsley
- ½ tbsp dried thyme
- leftover sausage ragu (see tip, below)
- 120g grated mozzarella
- 90g pack baby leaf salad

Method
- Preheat the oven to gas 7, 220°C, fan 200°C. Prick the potatoes all over with a fork, then microwave on high for 10 mins or until tender. Transfer to a tray, rub all over with the oil, then bake for 10 mins or until crisp and tender.
- Meanwhile, in a bowl, mix the breadcrumbs and herbs together; set aside.
- Halve the potatoes lengthways and scoop out the flesh into a bowl. Mash, then stir in the sausage ragu; season. Return the skins to the tray, fill with the mash mixture, then top with the mozzarella and herby breadcrumbs.
- Bake for 13-15 mins or until the cheese has melted and the breadcrumbs are golden. Serve with the salad leaves.
