Ingredients
- 300g spaghetti
- 4 smoked mackerel fillets, skinned and flaked
- 200g (7oz) extra light soft cheese
- 1 bunch spring onions, chopped
- 1 lemon, juiced
- large handful rocket
If you haven't got spaghetti, try using linguine instead

Method
A great tasting and value meal for all the family, oily mackerel works so well folded though a helping of spaghetti and covered in a decadent, creamy sauce.
- Bring a large pan of water to the boil and cook the pasta following the packet instructions. Drain, reserving 100ml (3 1⁄2fl oz) pasta water.
- Return the pan to the hob and add the flaked mackerel, soft cheese, onions and lemon juice, stirring until the cheese has melted.
- Add the pasta, reserved water and rocket and toss to combine.
- Serve immediately with freshly ground black pepper, if you like.
