Bursting with punchy flavours, these marinated olives are the perfect accompaniment to any Mezze platter. Quick and easy to make, once in the liquid these olives will keep for up to 2 weeks, making them the perfect snack. See method
Ingredients
- ½ tsp crushed chillies
- 2 garlic cloves, thinly sliced
- 1 tsp dried oregano
- 125ml olive oil (or oil reserved from a sundried tomato jar)
- 2 x 340g jars pitted queen olives, drained

Method

Put the crushed chillies, garlic, oregano and oil in a mixing bowl with a little black pepper. Add the olives, toss well to coat in the marinade, then cover and set aside for 30 mins. Transfer the olives and marinade to the empty olive jars; they will keep for up to 2 weeks in the fridge.
