Kick off Christmas morning in style with this extra-special, cocktail-inspired breakfast. We've taken all the flavours of a mimosa and paired them with pancakes for a fun twist – think fresh orange, mint, and a silky prosecco sauce. To keep things easy, we've used readymade pancakes, but you can make your own, if you prefer. See method
Ingredients
- 2 red grapefruits
- 4 clementines
- 1 orange, zested and juiced
- 100ml prosecco
- 75g caster sugar
- 1 tbsp cornflour
- 10g salted butter
- sweet pancakes
- fresh mint leaves, to serve
- 50% less fat crème fraîche, to serve (optional)

Method
- Use a sharp knife to remove the peel and pith from the grapefruits, clementines and orange, then slice into rounds; set aside.
- Add the orange zest and juice and prosecco to a saucepan over a low-medium heat. Once steaming, add the caster sugar and cornflour and heat for 8-10 mins, whisking continuously, until the sauce has thickened to a pourable consistency. Remove from the heat and whisk in the salted butter to create a glossy sauce.
- Heat the pancakes to pack instructions.
- To assemble, place 4-6 slices of citrus in the middle of each pancake and fold into quarters. Add more citrus slices and a few fresh mint leaves. Pour over the prosecco sauce and serve with a dollop of crème fraîche, if you like.
