Spoon a scant tsp of sherry mincemeat in the centre, pull up the sides to enclose the filling, then roll between your palms to make a ball. Repeat with the remaining mixture to make 10 balls.
- Roll each ball again, with slightly damp hands, then roll in 25g desiccated coconut to coat. The snowballs can be served at room temperature or from the fridge.
