Ingredients
- 750g Jersey Royal potatoes
- 1 tbsp olive oil
- 4 rashers smoked streaky bacon
- 100ml reduced-fat soured cream and chive dip
- 2 spring onions, green parts finely sliced
If you haven't got any new potatoes, try dicing a large white potato instead

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Toss the potatoes with the oil on a baking tray, season, then roast for 45 mins. Add the bacon for the last 20 mins.
- Chop the bacon, then split the potatoes down the centre, leaving the bottoms intact.
- Top each potato with reduced-fat soured cream & chive dip and scatter with the bacon and spring onions. Finish with a twist of black pepper to serve.
