These delicious cookies are packed with oats and juicy raisins. Speedy to rustle up and wonderfully crumbly, they are a great teatime treat. See method
Ingredients
- 40g extra light spread
- 35g light soft brown sugar
- 1 egg
- 1 tsp vanilla extract
- 50g (2oz) self-raising flour
- 1½ tbsp granulated sweetener (sugar replacement)
- 1 tsp ground cinnamon
- 1 tsp salt
- 50g (2oz) rolled oats
- 50g (2oz) juicy raisins
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method
- Heat oven to gas 5, 190°C, fan 170°C. In a mixing bowl, beat the spread and sugar until smooth, then beat in the egg and vanilla with a little of the flour until fluffy. Stir in the rest of the flour, granulated sweetener, cinnamon and salt. Stir in the oats and raisins and combine thoroughly.
- Take a small spoonful of the mixture and place on a large nonstick baking tray. Repeat until you have 18 cookies. Bake for 15 minutes or until light golden brown. Put on a wire rack to cool. If storing, use an airtight container.
