The ultimate cheese toastie, the name of this snack literally translates as mozzarella ‘in carriage’ as the bread forms a crisp vehicle for the hot, stringy cheese. Served with a rich tomato and pepper sauce, these gooey sandwiches are a guaranteed crowd-pleaser and take just 20 minutes to prepare. See method
Ingredients
- 25g butter, softened
- 8 slices white bread
- 250g mozzarella, sliced
- 4 slices ham (optional)
- 8 large basil leaves
- sunflower oil, for frying
- 2 eggs
- 1 tbsp milk
For the sauce
- 1 tbsp oil
- 2 pointed red peppers, cut into small chunks
- 200g chopped tomatoes
- 1 garlic clove, crushed
- ½ tsp chopped rosemary
If you haven't got any white bread, try using brown instead

Method
- To make the sauce, heat the oil in a pan. Add the peppers and cook for 10 mins, then stir in the tomatoes, garlic and rosemary. Simmer for 5 mins more; season to taste.
- Butter the bread, then divide the mozzarella, ham (if using) and basil between 4 slices. Top with the remaining bread.
- Heat enough oil to cover the base of a large frying pan. Ina bowl, whisk the eggs with the milk. Dip 2 sandwiches in the beaten egg, turning to cover, and then fry for 1-2 mins on each side, until golden. Repeat with the remaining sandwiches. Serve with the sauce.
