Ingredients
- 200g punnet cherries, halved and pitted
- 1 tbsp maple syrup or clear honey, plus extra to serve (optional)
- 120g porridge oats
- 2 tbsp milled flax seeds
- ½ tsp ground cinnamon
- 300ml unsweetened almond milk
- 1 eating apple, coarsely grated
- 25g pack cocoa & vanilla nut bites

Method
- The night before, put the cherries, 1 tbsp maple syrup (or honey) and 1 tbsp water in a small, lidded saucepan over a low heat. Cover and gently cook for 5-10 mins until softened and juicy. Transfer the cherries to a bowl with a slotted spoon, leaving the cooking juices in the pan. Simmer the juices over a medium heat for 2-3 mins until reduced and syrupy. Pour over the cherries and leave to cool completely before placing in the fridge overnight.
- In a large bowl, mix together the oats, flax seeds, cinnamon and almond milk. Cover and transfer to the fridge overnight.
- The next day, divide the oats between 2 bowls. Top with the cherry compote, grated apple and nut bites, and drizzle with extra maple syrup, if you like.
