Turn up the heat with this easy homemade rogan josh recipe that's cooked with authentic Indian spices and pieces of slow-cooked tender pieces of lamb to bring out the full flavour. See method
Ingredients
- 2 tbsp vegetable oil
- 750g (1 1/2lb) stewing lamb, cubed
- 1 onion, finely chopped
- 3 garlic cloves, crushed
- 2 tsp ginger, finely grated
- 6 cardamom pods
- 4 cloves
- 2·5cm (1in) piece cinnamon bark
- 2 tsp ground cumin
- 2 tsp ground coriander
- 2 tsp paprika
- 1 tsp chilli powder
- 3 tbsp tomato purée
- 150g natural yogurt

Method
- Heat 1 tbsp oil in a heavy based saucepan or casserole dish. Fry the lamb for about 10 minutes, until golden brown, cooking in batches to avoid overcrowding the pan if you need. Set aside.
- Add the remaining oil to the pan, followed by the onions. Cook for 3 – 5 minutes until soft, then stir in the garlic, ginger, cardamom, cloves and cinnamon and cook for 1 minute more. Add the cumin, coriander, paprika, chilli powder and tomato purée and return the lamb to the pan.
- Cook for 3 minutes, stirring often to ensure the lamb is well coated. Stir in the yogurt, 1 tbsp at a time, pour over 125ml (4fl oz) water and bring to a boil. Reduce the heat to low and simmer gently for 1 hour, topping up with water if needed or until the lamb is tender.
