One-tray pesto salmon with gnocchi and tomatoes recipe

We've made a tasty pesto crust to top salmon and then baked it in the oven with gnocchi in this super-easy dinner for two. It hits 2 of your 5-a-day and is high protein too! See method
Ingredients
- 400g pack potato gnocchi
- 4 garlic cloves, unpeeled
- 300g pack cherry tomatoes
- 2 tsp olive oil
- 2 tbsp panko breadcrumbs
- 2 tbsp reduced-fat green pesto
- 260g pack salmon fillets
- ½ lemon, zested and juiced
- 200g baby spinach
- 10g fresh basil, leaves picked

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Spread the gnocchi, garlic and tomatoes in a baking tray, drizzle over the oil, season and bake for 15 mins.
- Meanwhile, mix the breadcrumbs and pesto together, then spread over the top of the salmon fillets. Remove the baking tray from the oven, stir in the lemon zest and juice and arrange the salmon fillets on top. Bake for a further 10-12 mins or until the fish is cooked through.
- Transfer the salmon to plates, squeeze the garlic from their skins and stir into the gnocchi mixture with the spinach and most of the basil. Serve alongside the salmon, topped with the remaining basil.
