Ingredients
- 400g (14oz) cooked new potatoes
- 30g (1oz) fresh dill
- 2 spring onions
- 30ml (1fl oz) low fat mayonnaise
If you haven't got any new potatoes, try dicing a large white potato instead

Method
- Ask an adult to help chop the potatoes in half and place them into a mixing bowl.
- Wash and snip the spring onions and dill, then add these to the bowl. Or you could use other herbs, such as mint or coriander, to change the flavour.
- Add the mayonnaise and stir all the ingredients together. Children will particularly enjoy this mixing part. You could also add more vegetables like canned sweetcorn or chopped pepper.
- Serve as a side dish with dinner, or include in a delicious a picnic.
