Ingredients
- 140g butter, at room temperature
- 100g light brown sugar
- 50g caster sugar
- 1 large egg
- 1 tsp vanilla extract
- 200g plain flour
- 1 tsp baking powder
- 150g pick ‘n’ mix of your choice. We love jazzies, chocolate raisins, mini eggs and fudge (choose carefully if you’re baking for vegetarians)

Method
- Preheat the oven to gas 5, 180°C, fan 160°C. In a mixer, beat the butter and sugars at medium speed until soft and creamy. Add the egg and vanilla extract, and beat for 1 min. Stir in the flour and baking powder and bring together to form a soft dough. Add the pick ‘n’ mix, reserving a handful for decoration, and stir to bring together.
- Spoon dessertspoons of the dough onto a nonstick baking tray or lined baking tray and dot with the reserved pick ‘n’ mix. Jelly sweets will melt into sugary puddles, but they set on cooling so don’t worry. Bake for 8-10 mins until golden and cooked through.
- Remove from the oven and allow to cool for 5 mins before removing from the tray and cooling completely on a wire rack.
Make ahead: Make up to 4 days in advance and store in an airtight container. Prepare the dough, spoon into balls and freeze until needed; cook from frozen, increasing the cooking time to 12-14 mins.
