Ingredients
- 300ml (1/2pt) white wine vinegar
- 75g (3oz) caster sugar
For the salad
- 1 cucumber, halved lengthways, seeds scooped out, and finely sliced
- 2 tablespoon fresh dill, chopped

Method
- Pour the vinegar into a saucepan, add the sugar, bring to the boil, then stir and simmer for 5 minutes or until the sugar has dissolved and the mix is slightly syrupy. Cool.
- Slice the cucumber thinly and put in a bowl. Pour the vinegar and dill into the bowl, and mix. Cover and chill until ready to serve.
