If you like pigs in blankets then you'll love these bao buns. Stuffed with crispy pigs in blankets, crunchy cucumber and sriracha mayo, these easy buns make the perfect canapé for your Christmas party. See method
Ingredients
- 6 Tesco Finest pigs in blankets
- 3 tbsp light mayonnaise
- 1 tbsp sriracha, plus extra serve (optional)
- 6 bao buns
- 6 slices cucumber, sliced on the diagonal
- 2 spring onions, trimmed and finely sliced
- ¼-½ red chilli, sliced (optional)
- 5g fresh coriander, to serve
- 6 tsp crispy onions

Method
- Cook the pigs in blankets to pack instructions. Once cool enough to handle, slice them in half lengthways. Meanwhile, mix together the mayonnaise and sriracha; season with black pepper.
- Heat the bao buns to pack instructions. Open out, then spread over the sriracha mayonnaise. Fill with the cucumber, then top each with a halved pig in blanket, spring onions, chilli (if using) and coriander. Sprinkle over the crispy onions, then fold back to serve.
Tip: To make your bao buns extra festive, swap out the sriracha mayonnaise for a dollop of cranberry sauce.
