Ingredients
- 1 ripe medium pineapple, peeled, cored and finely sliced lengthways, or a 432g tin pineapple slices, drained
- 4 tbsp clear honey
- 1 lime, zested and juiced
- 4 mint sprigs, leaves picked and finely shredded
If you don't have any limes, try a lemon instead

Method
- Arrange the pineapple on a plate or in an airtight container.
- In a bowl, mix the honey, lime juice and zest together, stir through the mint, then drizzle over the pineapple. Make up to a day ahead and keep, covered, in the fridge.
