Ingredients
- 8 eggs
- 75g reduced fat mozzarella, torn into 2-3cm lengths
- 10g fresh basil leaves, torn
- 125g cherry tomatoes
- 1 tbsp oil
- 150g carrot sticks, to serve

Method
- Crack the eggs into a bowl and lightly beat with a fork. Add half the mozzarella, tomato and basil. Preheat the grill to high.
- Melt the butter in an ovenproof, non-stick 30cm frying pan over a medium-low heat. Pour in the egg mixture. After 2 mins of cooking, scatter over the remaining toppings and continue to cook for 3-4 mins until the edges of the omelette have set.
- Transfer to the grill for 3 mins until set and the mozzarella has melted and is beginning to brown. Slice and serve with the carrot sticks.
