Ingredients
- 100g (3½oz) peaches, quartered, or halved if small
- 100g (3½oz) plums, quartered, or halved if small
- 200g (7oz) caster sugar
- 140g (4½oz) plain flour, sifted
- ⅛tsp of salt
- 3 eggs
- 4 tbsp soya milk
- 1tbsp Amaretto
- 1tsp vanilla extract

Method
Quartered plums and peaches dot across the top of this thick and flan-like clafoutis. Each slice delivers the ideal balances of sweetness and acidity; the use of soya milk instead of regular milk also means that it's dairy-free.
- Preheat the oven to Gas Mark 4, 180°C, fan 160°C. Butter and lightly flour a 23cm (9in) baking dish.
- Arrange the cut fruit in the dish. In a bowl combine the sugar, flour and salt and make a well. Whisk the eggs into the milk and gradually pour this mixture into the dry ingredients. When you have a smooth batter, mix in the Amaretto and vanilla extract.
- Pour into the baking dish around the fruit (ideally a little of this will still be visible, then bake for 40-50 minutes or until puffed up and lightly browned.
