Ingredients
- 4 cardamom pods
- 500g pot Greek-style yogurt
- 2 x 312g tins Grower’s Harvest broken mandarin pieces in light syrup, drained (2 tbsp syrup reserved)
- 220g honey & almond granola
- 250g pack pomegranate seeds or 2 pomegranates, seeds only
- mint leaves, to serve (optional)

Crack open the cardamom pods, then crush the seeds with a pestle and mortar (or the end of a rolling pin) until finely ground. Stir through the yogurt, along with the reserved mandarin syrup.

Spoon half the yogurt into 6 small glasses (about 250ml). Top with a layer of mandarin pieces, a layer of granola and a layer of pomegranate seeds (about 1 tbsp of each).

Repeat the layers, ending with a scattering of pomegranate seeds. Top with mint leaves, if you like.
