Pork and apple burgers with sweet potato fries recipe

Make homemade burger patties with pork mince and fresh apple. Stuff into buns with crispy salad and serve with sweet potato fries - what a treat! See method
Ingredients
- 2 medium sweet potatoes, washed and cut into thin chips
- 2 tbsp vegetable oil
- pinch dried herbs or crushed chilli flakes
- 2 onions, thinly sliced
- 500g Woodside Farm pork mince 12% fat
- 1 Braeburn apple, finely chopped
- ½ tsp garlic granules
- 4 large wholemeal baps
- mayonnaise, to serve (optional)
- 30g baby leaf salad
If you don't have mince, cut open some sausages instead

Method
- Preheat the oven to gas 6, 200°C, fan 180°C.
- Toss the sweet potato chips with 1 tbsp of the oil, the dried herbs, salt and black pepper.
- Spread out in a single layer across 2 lined baking trays and bake for 30-35 mins, turning after 20 mins, until browned at the edges.
- Meanwhile, heat the rest of the oil in a large frying pan and cook the onion for 5-6 mins or until soft and browned. Scoop the onions into a bowl and set aside.
- Put the mince into a large bowl and mix in the diced apple, garlic granules and plenty of black pepper.
- Divide the mixture into 4 and shape into wide, thin patties. Pop the burgers into the same pan that had the onions and cook on a medium heat for 4-6 mins on each side until browned and cooked through.
- To serve, spread a little mayo onto each bun, if you like, followed by a few salad leaves and top with a burger. Add some fried onions to the top and a scoop of sweet potato fries to each plate.
