Prawns are the star of the show in this Indonesian fried rice fakeaway recipe, it comes topped with a fried egg and served with quick-pickled veggies. Shop-bought rice saves time but you can use home-cooked rice if you prefer. See method
Ingredients
- 200g fine beans, cut into 3cm pieces
- ¼ cucumber, finely sliced
- 100g radishes, finely sliced
- 2 tbsp rice vinegar
- 3 tbsp groundnut oil
- 4 shallots, finely sliced
- 4 garlic cloves, finely sliced
- 20g fresh ginger, cut into matchsticks
- 1 red chilli, deseeded and finely sliced
- 15g fresh coriander, stalks finely sliced and leaves picked
- ½ tsp turmeric
- 150g cooked and peeled king prawns
- 2 x 250g packs wholegrain rice
- 3 tbsp sweet soy sauce
- 4 large eggs
- 150g baby spinach, roughly chopped
- 1 lime, cut into wedges, to serve
- prawn crackers, to serve

Method
- Place a saucepan of boiling water over a high heat and blanch the beans for 3 mins. Drain and run the beans under cold water.
- Put the cucumber and radish in a bowl with the rice vinegar. Massage together with your hands. Put to one side.
- Heat 1 tbsp of oil in a large frying pan or wok over a medium heat, fry the shallots for 4 mins, stirring regularly, until golden. Add the garlic, ginger, chilli and coriander stalks and fry for another 2 mins, until softened. Add the turmeric, drained beans and prawns and fry for 2mins. Add the rice and sweet soy sauce and cook until the rice is piping hot, stirring regularly.
- Meanwhile, heat another 2 tbsp oil in a large frying pan over a medium-high heat. Crack in the eggs and fry for 2 mins until crispy but still with a runny yolk.
- Finally, stir the spinach and coriander leaves through the rice.
- Divide the nasi goreng between the plates. Top with a fried egg, serve with the quick-pickled radish and cucumber, a wedge of lime and a handful of prawn crackers.
