Ingredients
For the salad
- 2 handfuls watercress or baby mustard greens
- 125g (4oz) smoked mackerel, flaked
- 2 spring onions
- 8 radishes
- 15g (2 tsp) toasted sesame seeds
For the dressing
- 15ml (1 tbsp) soy sauce
- 15ml (1 tbsp) sesame oil
- 15ml (1 tbsp) lemon juice
- 15g (1 tbsp) caster sugar
- 5g (1 tsp) ginger, grated
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- Place the salad leaves on two plates and top with the mackerel, spring onions and radishes.
- Mix all the ingredients for the dressing in a bowl and pour over the salads. Sprinkle with the sesame seeds and serve.
