Ingredients
- ¼ baguette
- 2 tbsp houmous
- ½ red pepper, sliced
- 1 small carrot, grated
- ½ yellow pepper, sliced
- 2-3 iceberg lettuce leaves, shredded
- ¼ cucumber, sliced
- 1 cooked beetroot, sliced
- 1 tbsp pesto

Method
- Split the baguette in half and spread the houmous over the bottom piece.
- Layer up the veg, drizzle the pesto over the top and sandwich together with the top half of the baguette.
Tip: You could easily double or multiply this recipe as you need. The baguettes could be made up to a day ahead and kept in the fridge, ready for a packed lunch or picnic.
