Give rice a tropical twist with fresh coconut, lime and fragrant toasted cumin seeds. Serve alongside your favourite curry recipe for a super speedy side dish. See method
Ingredients
- 200g basmati rice
- 50g coconut chunks
- 2 tsp cumin seeds
- 1 lime, zested and juiced
Basmati rice can always be swapped for long-grain

Method
- Soak the rice in cold water for 30 mins. Drain in a colander, then place over a pan of boiling water; cover, steam for 20 mins.
- Peel the coconut chunks in to shavings. Dry-fry in a pan with the cumin seeds for 2 mins, stirring. Scatter over the rice with the zest and juice of the lime.
