A delicious salad, with slices of tender roast beef, layers of new potatoes and a tasty, zingy dressing. Quick and simple to make and packed full of flavour. See method
Ingredients
- 200g (7oz) new potatoes
- 1 tbsp olive oil
- 90g bag mixed salad leaves
- 1 x 220g pack piccolo cherry tomatoes, halved
- 8 roast beef slices
For the dressing
- 1 tbsp creamed horseradish
- 1 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 4 tbsp olive oil
If you haven't got any new potatoes, try dicing a large white potato instead

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the potatoes in a roasting tin and drizzle over the oil. Season well and toss to coat. Roast for 25 minutes, or until cooked through and golden. Remove from the oven and leave to cool; halve.
- Meanwhile, for the dressing, combine all the ingredients in a small jug with a little seasoning. Cover and set aside, until needed.
- To assemble, arrange 4 large jars on a counter. Add a layer of potatoes, followed by a layer of beef, tomatoes, and finally the salad leaves. Drizzle over the dressing just before serving.
