Forget plain boiled veg and take your side dishes up a notch with this simple roasted broccoli and spiced yogurt. The broccoli becomes irresistibly crisp and caramelised in the oven, whilst a drizzle of creamy curried yogurt and crunchy pumpkin seeds are a simple finishing touch. See method

- 700g broccoli florets
- 1 tbsp olive oil
- 150g Greek yogurt
- 2 tsp lemon juice
- 1 tsp curry powder
- 30g pumpkin seeds, toasted

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Toss the broccoli in the olive oil, season and roast for 25 mins.
- Mix together the Greek yogurt, lemon juice and curry powder until fully combined.
- Transfer the broccoli to a serving dish, drizzle with the curried yogurt and top with the toasted pumpkin seeds.
