- 600g carrots, sliced
- 1 tbsp olive oil
- 10g whole mint leaves
- ½ red chilli, halved, seeded and sliced
- ½ lemon, zested and juiced
- 50g feta, crumbled

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the carrots in a baking tray, drizzle with olive oil and roast for 25-30 mins, until lightly golden.
- In a serving dish, mix the carrots with the mint, chilli, zest and juice of the lemon and feta.
