A easy and delicious meal to rustle up for your partner or loved ones. Simply place all your ingredients in a roasting tin and bake, served with creamy new potatoes or a refreshing salad. See method
Ingredients
- 4 x 150g cod fillets
- 10-12 cherry tomatoes
- 1 x 125g pack mozzarella, roughly torn
- small handful basil
If you don't have cod, try using another white fish

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Put the cod and tomatoes in a large roasting tin and lay the mozzarella pieces on top.
- Bake for 15-20 mins or until cooked through and the fish flakes easily. Once out of the oven, tear and scatter over the basil leaves and serve with new potatoes or salad.
