Rocket salad with pomegranate recipe

A fresh and exciting salad which marries peppery rocket with a sweet pomegranate dressing. See method
Ingredients
For the salad
- 110g (3 3/4oz) rocket
- bunch spring onions, trimmed, then white parts finely sliced and green parts finely shredded lengthways
- 1/2 pomegranate, seeds only
For the dressing
- 1/2 pomegranate, juiced
- 45ml (3 tbsp) extra-virgin olive oil
- ½ tsp Dijon mustard
- 10ml (2 tsp) balsamic vinegar
- handful chives, snipped
If you don't have any spring onions, try using white onions or leeks and adjust the amount accordingly

Method
- To make the dressing, combine the pomegranate juice, olive oil, Dijon mustard, balsamic vinegar and half the chives in a bowl. Season to taste.
- Toss the rocket and shredded spring onion greens in the dressing. Scatter with the pomegranate seeds, sliced spring onion whites and remaining chives. Serve.
