Ingredients
- 200g (7oz) caster sugar
- 2 large lemons, zested and juiced
- 4 sprigs fresh rosemary

Method
- Fill a pan with 1 litre (1 3⁄4pt) water, add the sugar, lemon zest and juice. Heat gently, stirring, until the sugar dissolves.
- Bring to the boil and keep boiling rapidly for 2 minutes, then remove from the heat, add the rosemary sprigs and leave to cool.
- When cold, strain into a clean container and chill until required. Serve over ice, decorated with fresh rosemary sprigs.
