You've heard of salt and pepper chips, but have you tried salt and pepper hash browns? Fry the frozen favourite with peppers, garlic and Chinese five-spice for crispy and golden hash browns. These are delicious served with crispy fried eggs for a weekend brunch treat. See method
Ingredients
- 12 hash browns
- 1 tsp sugar
- 1 tsp ground black pepper
- ½ tsp ground white pepper
- ½ tsp Chinese five-spice
- ½ tsp salt
- 1 tbsp vegetable oil
- 1 onion, roughly chopped
- 2 peppers (any colour), roughly chopped
- 3 garlic cloves, crushed
- 3cm piece ginger, finely chopped
- 1 red chilli, finely sliced (optional)
- 1 spring onion, finely sliced, to serve
- sesame seeds, to serve (optional)
- 1 lime, cut in wedges, to serve (optional)
If you don't have any limes, try a lemon instead

Method
- Cook the hash browns according to pack instructions.
- Meanwhile combine the sugar, black and white pepper, Chinese five-spice and salt in a small bowl.
- Set a frying pan over a medium-high heat and add the oil. When hot, stir-fry the onion, peppers, garlic, ginger and half the chilli (if using) for 5-8 minutes until softened.
- When the hash browns are golden and crisp, add them to the frying pan with the spice mix. Stir gently for a couple of minutes to coat everything in the spices.
- Serve on a platter, scattered with the spring onion, sesame seeds and remaining chilli.
