Salted caramel cones recipe

Turn a simple tub of ice cream into a proper treat with these salted caramel cones. A drizzle of homemade caramel sauce, salty crushed pretzels and crushed chocolate tiffin are the best toppings for this perfect cone. See method
Ingredients
- 150g (5 1/4oz) caster sugar
- 150ml (5fl oz) double cream
- 40g (1 1/2oz) butter, diced
- ½ tsp sea salt flakes
- ½ x 900ml tub caramel vanilla ice cream
- 6 large waffle cones
- salted pretzels, to decorate
- 1/2 x 14-pack salted caramel and pretzel tiffin, to decorate

Method
Turn a simple tub of ice cream into a proper treat with these salted caramel cones. A drizzle of homemade caramel sauce, salty crushed pretzels and crushed chocolate tiffin are the best toppings for this perfect cone.
- Put the sugar in a heavy-based pan with 100ml water. Gently heat until melted, then bubble – swirling the pan, but not stirring – until the mixture turns a rich caramel colour. Remove the pan from the heat, pour in half the cream, and whisk. Add the remaining cream, the butter and salt, then whisk until smooth. Pour into a heatproof container and chill until needed.
- Remove the caramel sauce from the fridge, microwaving or heating gently in a pan to loosen if necessary. Scoop the ice cream onto the cones, and drizzle the caramel sauce over the ice cream. Smash the pretzels and sprinkle over the top. Break the tiffin into small chunks and scatter over the ice cream, along with the chocolate stars.
