Sausage, broccoli and gnocchi bake recipe

This simple dinner for two can be ready in just over half an hour and makes a comforting, filling midweek meal. Nutritious broccoli florets, pillowy gnocchi and chilli-spiced sausage meat are topped with mozzarella and Parmesan and baked until gorgeously golden. This simple sausage recipe is great for those looking for a little pick-me-up during the colder months. See method
Ingredients
- 200g broccoli, stems discarded, separated into florets
- 400g pack fresh potato gnocchi
- 3 reduced fat pork sausages
- ¼ tsp chilli flakes
- 1 garlic clove, crushed
- 1 tbsp balsamic vinegar
- 20g basil leaves, roughly sliced
- 60g half fat mozzarella, roughly torn
- 1 tbsp Parmesan or vegetarian hard cheese, finely grated
- rocket, to serve

Method
- Preheat the oven to gas 6, 200°C, fan 180°C. Blanch the broccoli in boiling water for 3 mins. Drain and roughly chop.
- Cook the gnocchi following the pack instructions; drain well.
- Meanwhile, squeeze out the sausage meat and discard the skins. Put the meat straight into a large frying pan set over a medium-high heat. Cook, stirring with a wooden spoon to break the meat up, for about 4 mins, or until browned. Add the chilli flakes and garlic and cook for 2 mins more. Stir in the chopped broccoli with the vinegar and cook through for 2-3 mins.
- Spoon into a baking dish with the basil and gnocchi. Top with the mozzarella and Parmesan and bake for 15 mins, or until the cheese has melted. Serve with a side of rocket.
