Ingredients
- 454g Cumberland sausages
- 1 red onion, sliced
- 100g cherry tomatoes
- 1tsp English mustard
- 5tbsp tomato relish
- 1tbsp oil
- 8 slices wholemeal bread
If you don't have red onions, try using white, brown or spring onions

Method
A classic sausage sandwich taken up a notch with the addition of sticky, caramelised red onions. Thick slices of bread are stuffed with meaty sausages, velvety onions and jammy tomatoes then sandwiched together with English mustard - what could be better?
- Preheat the oven to 200°C, gas mark 6.
- Place the sausages, onion, tomatoes, mustard, 1tbsp tomato relish and oil in a large baking tray. Mix well to coat. Bake for 40-45 minutes until cooked through, golden and caramelised, stirring once half way through.
- Spread the remaining relish over the bread and fill with the sausage and onion mixture.
