Seema’s Hong Kong-style French toast recipe

Seema’s Hong Kong-style French toast is the perfect dessert to enjoy after Justin’s chicken. She starts with the traditional peanut butter filling, then adds diced pineapple and an insanely crunchy coconut coating, taking this classic treat to a whole new level of flavour and texture. See method
Ingredients
- 3 slices thick white bread
- 1 tbsp smooth peanut butter
- 2-3 tbsp tinned pineapple chunks, roughly chopped
- 3 eggs
- 50ml milk
- ½ tbsp caster sugar
- 50g desiccated coconut
- vegetable oil, for shallow frying
To serve
- knob of butter
- drizzle of condensed milk
- pinch of flaky sea salt
If you haven't got any white bread, try using brown instead

Method
- Trim the crusts from the bread, then cut a square hole in the centre of one of the slices. Spread ½ tbsp peanut butter on one of the uncut slices, then top with the slice that has had the centre removed. Add the chopped pineapple into the hole, then add the remaining ½ tbsp peanut butter to the slice around the hole before topping with the final slice.
- In a shallow bowl, whisk together the eggs, milk, sugar and a pinch of salt. Place the desiccated coconut in a separate shallow bowl.
- Submerge the sandwich in the egg mixture for about 1 min to soak. Transfer to the coconut and turn to coat evenly on all sides.
- Heat a shallow layer of oil in a frying pan over a medium heat. Fry the sandwich for about 2 mins each side or until golden brown, spooning hot oil over the centre to help it brown evenly.
- Serve hot with butter and a little condensed milk drizzled over the top and finish with a pinch of flaky sea salt.
