Skillet flatbread pizzas recipe

Meals by Mitch's budget-friendly pizzas are made in a skillet pan and are ready in just 30 minutes! We've topped ours with ham and veggies, but you can customise yours with your family's favourite toppings. See method
Ingredients
- 500g self-raising flour
- 270ml cold water
- 2 tbsp olive oil
- 400g tin plum tomatoes
- 1 garlic clove, finely chopped
- 10 fresh basil leaves plus extra to garnish
- 2 packs mozzarella, cut into thin slices
- 1 red onion, finely sliced
- 125g pack of ham, chopped
No self-raising flour? Add 2 tsp baking powder for every 150g plain flour

Method
- Combine the flour, water, olive oil and a pinch of salt in a bowl. Mix until it starts to form a dough.
- Lightly flour a board and knead the dough for 2 mins until smooth.
- Divide the dough into 4 equal portions and roll each to about the thickness of a £1 coin. Each piece should be at least 25cm in diameter.
- In a separate bowl, combine the tomatoes, garlic, basil, along with a pinch of salt and pepper. If you want a smoother sauce, blitz this in a food processor.
- Heat a frying pan until piping hot and carefully pop in one of the dough pieces. When the dough starts to bubble and the base begins to slightly crisp, spoon 4-5 tbsp of the tomato sauce on top and spread it all over. Meanwhile, heat the grill to high.
- Next, add some red onion and ham to the pizza, along with a few slices of mozzarella, then put the pan underneath the hot grill for 3-4 mins, or until the mozzarella is golden.
- Remove the pizza and repeat with the remaining 3 pieces of dough.
- Cut the pizzas into quarters and serve with some basil leaves.
