Method
Making a quick infused oil is a super easy way to add plenty of flavour to simple veg dishes. Try these smashed peas with mint and lemon oil for a fresh side ready in just 15 mins.
- Boil the frozen peas for 6 mins. Drain and return to the pan.
- Meanwhile, put the olive oil and the pared zest and juice of a lemon in a pan over a low heat; leave to infuse for 5 mins.
- Mash the peas, then strain and mix in the oil. Top with mint leaves and the lemon zest.
